Ajda Mlakar v gosteh pri lastniku gostilne Brioni: Odlična hrana, pijača in družba

In the latest episode of „Kralj svoje kuhinje,“ Ajda Mlakar visited chef and owner of Bistro and Café Brioni, Tomaž Polenec. The episode aired on TV Veseljak and Aktual TV every Monday at 8:00 PM. Ajda brought along ingredients like Hokaido pumpkin, duck breasts, sliced almonds, butter, and organic oranges for Tomaž to work his culinary magic with. Tomaž, who has a penchant for French cuisine, was delighted with the ingredients. Viewers learned some tricks for preparing duck breasts, such as scoring them before cooking and searing them in a cold pan to render more fat and achieve a crispy crust.

Tomaž also shared a tip for saving the rendered fat from cooking, which can be used for frying eggs, potatoes, or even spread on bread. He emphasized the importance of having a bit of artistic flair for plating dishes. The hidden guest invited to the restaurant was Tilen Lotrič, who was working there as a student. Tilen thoroughly enjoyed the dish and praised the harmonious blend of flavors. Despite having a sweet tooth, Tilen’s favorite treat at the restaurant is Pavlova cake. In the end, they all agreed that life is meant to be enjoyed with good food, good drinks, and good company.

The shopping list for the episode included Hokaido pumpkin, butter, duck breasts, organic oranges, and sliced almonds. The ingredients for the pumpkin cream included butter, olive oil, shallots, Hokaido pumpkin, juice of two organic oranges, a bay leaf, rosemary, and salt. For the duck breasts, star anise, cinnamon sticks, cloves, black peppercorns, cayenne pepper, and salt were used. The sauce was made with shallots, butter, salt, orange liqueur, and orange juice. Belgian endive was prepared with olive oil, and orange salt was made with fleur de sel and the zest of two organic oranges.

The episode showcased the preparation of duck breasts in Hokaido pumpkin sauce, highlighting the creativity and skill of Tomaž Polenec in the kitchen. The combination of flavors and techniques demonstrated during the show provided viewers with valuable insights into the world of gourmet cooking.
